Balsamic Herb Oyster Mushroom Skewers

Ingredients:

  • 1 pound oyster mushrooms, cleaned and stems trimmed
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons low-sodium soy sauce
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme leaves
  • 1 teaspoon honey or maple syrup
  • Fresh ground black pepper to taste
  • Wooden or metal skewers

Instructions:

  1. If using wooden skewers, soak them in water for at least 30 minutes before grilling to prevent burning.
  2. In a bowl, whisk together balsamic vinegar, soy sauce, olive oil, garlic, rosemary, thyme, honey, and black pepper.
  3. Keep oyster mushrooms whole or tear larger ones into 2-3 pieces, maintaining their natural shape.
