Today we’re excited to share one of our go-to comfort meals: Creamy Ziti with Oyster Mushrooms. This one-pot wonder features earthy oyster mushrooms sautéed to golden perfection, nestled into tender ziti pasta, all wrapped in a luscious cream and Parmesan sauce. It’s rich, flavorful, and ready in about 30 minutes!
Creamy Ziti with Oyster Mushrooms
One-pot comfort with rich, earthy flavor
Ingredients
1 pound (16 oz) ziti pasta
2 tablespoons olive oil
3 tablespoons unsalted butter
1 medium onion, finely chopped
4 cloves garlic, minced
12 oz oyster mushrooms, torn or sliced
½ cup dry white wine (or vegetable broth)
4 cups vegetable broth
1 cup heavy cream
1 teaspoon dried thyme
1 teaspoon salt (adjust to taste)
½ teaspoon black pepper
½ cup grated Parmesan cheese (plus more for serving)
2 tablespoons chopped fresh parsley (optional)
Instructions
Prep the Ingredients
Finely chop the onion, mince the garlic, and gently tear or slice the oyster mushrooms into bite-sized pieces.
Sauté Aromatics
In a large heavy-bottomed pot or Dutch oven, heat olive oil and butter over medium heat.
Add the onion and garlic and sauté for about 3 minutes until fragrant and translucent.
Cook the Mushrooms
Add the oyster mushrooms and cook for 5–7 minutes, stirring occasionally, until they begin to brown and release their moisture.
Deglaze with Wine
Pour in the white wine or broth, scraping up any browned bits from the bottom of the pot. Simmer for 2–3 minutes.
Add Pasta & Simmer
Stir in the ziti, broth, heavy cream, thyme, salt, and pepper.
Bring to a boil, then reduce the heat, cover, and simmer for 10–12 minutes. Stir occasionally until the pasta is al dente and the sauce has thickened.
Finish the Dish
Remove from heat and stir in the Parmesan cheese until melted and creamy. Adjust seasoning if needed.
Garnish & Serve
Top with chopped fresh parsley and extra Parmesan. Serve hot and enjoy!
